Flavoursome Lamb Shanks

What you will need:
5 lamb shanks
2 large potatoes
3 carrots
1 can of tomatoes
4 cloves of crushed garlic
2 tablespoons of curry powder
1 large onion chopped
1 teaspoon of chilli powder
4 tablespoons of olive oil
1 cup of coconut milk

  • Heat the oil and add garlic onions chilli and curry powder and toss the chopped vegetables and shanks into it and sear for 3-4 minutes.
  • Transfer the lamb shanks and vegetables into an oven proof dish add all other remaining ingredients cover with foil and cook for about 3 hours on a medium heat.
  • I have also cooked this for 8 hours on low heat in a slow cooker.
